Michel Flanzy developed carbonic maceration in 1934. Jules Chauvet is considered the father of carbonic maceration. He studied & promoted the technique. Also promoted winemaking without sulphur additions.

Roche pourrie is “rotten rock” mixture of volcanic rock, schist, and crystalline rock.

Chiroubles is the highest altitude with vineyards from 250-400masl. The slopes are steel and erosion is an issue.
