How are balsamic esters formed
They are formed from the reaction of aromatic balsamic acids like benzoic and cinnamic acid with their corresponding alcohols with the removal of water in the presence of an enzyme e.g cinnamyl cinnamate, benzyl cinnamate, benzyl benzoate
