Bacterial Foodborne Diseases Flashcards
Bacterial foodborne illness caused by Intoxication
Do not colonize intestinal tract
bacteria replicates in food (not GI Tract)
bacteria produce toxins in food
Intoxication foodborne bacteria
Exotoxins (gram +) Staph aureus (skin flora/ pathogen)
Bacillus cereus (environmental or rice contaminate)
Clostridium botulinum (environmental soil)
Clostridium perfringens (intestinal bacterium of animals)
Bacterial foodborne illness caused by infection
many bacteria organism
Bacteria colonize the GI tract
Bacterial toxins names by
- type
2. target tissue
Infection foodborne bacteria
Endotoxins (gram -) Campylobacter jejuni Salmonella E. coli Vibrio cholera Listeria monocytogenese
Symptoms of intoxication
rapid onset ( 30 min - 6 or 12 hours) illness lasts ~1 - 2 days
Exception is Botulism (neurotoxin)
Symptoms of infection
onset is hours- days illness last days many produce enterotoxins = watery diarrhea (mild-mod) killing of enterocytes cause dysentery, fever, septicemia
Staphylococcus aureus
reservoir, transmission, coin signs, prevention
gram + clusters of cocci
skin and nose of healthy people vehicle transmission: food contaminated with s. aureus V/D, cramping, short duration (+/- 24 hrs) proper food hygiene and storage
What is the most common food borne intoxication
Staphylococcus aureus
Bacillus cereus
reservoir, transmission, coin signs, prevention
Gram + soil dwelling rod shaped spore forming bacteria
soil is natural habitat vehicle food transmission 2 forms of clinical signs 1. Enteric form (IP = 30 min - 6 hrs) - nausea / vomiting 2. Diarrhea form (IP = 8 -16 hrs) - diarrhea cramping Food hygiene and storage
Campylobacter jejuni
reservoir, transmission, prevention
normal intestinal flora of many species (birds & mammals)
very fragile
vehicle is contaminated food/water
low infectious dose
Direct contact
target the vehicle
OFFS, hygiene, pasteurization, proper handling
Salmonella spp.
reservoir, transmission, prevention
rod shaped gram -
widespread GI flora in many animals
Pre and post harvest
Salmonella Enteritidis
causes egg- associated salmonellosis
Eating raw or undercooked eggs
E. coli
reservoir, transmission, prevention
rod shaped gram - bacterium
enteric bacteria found in many animals
vehicle contaminated food and meat
Pre and Post harvest
Vibrio cholerae
reservoir, transmission, coin signs, prevention
Comma shaped gram (-) bacterium
people and natural in brackish rivers & coastal waters
Water contamination most important
Food contaminated by water
Infection + enterotoxin = WATERY DIARHHEA
Sanitation of sewage and proper food preparation
