Bacteria Flashcards
How do bacteria survive and multiply
Bacteria need how many conditions to survive and multiply
Four
What are the four conditions bacteria need to survive and multiply
Food, moisture, warmth and time
Bacteria prefer to grow in food which is high in (3)
State examples of these types of foods
Protein, vitamins and minerals
Chicken, fish, milk, beef, pork, cheese and cream
Why does bacteria need moisture (water)
To grow and therefore cannot multiply in dry foods
What happens once dry food is reconstituted (water is added)
Then the food becomes an ideal breeding ground for bacteria
Three examples of foods that are reconstituted before they are eaten
Custard powder
Packet soup
Pot noodle
Rice
Pasta
Cous Cous
Why do bacteria like to be kept warm
They multiply most rapidly in warm conditions
Bacteria is _________ between __ and 100°C
destroyed
64
What is the DANGER ZONE
it’s when bacteria multiply rapidly between 5°C and 63°C
Bacteria multiply_______ in the fridge at what temperature
Slowly
1-4 °C
Bacteria are ________ in the freezer ( still alive ) at what temperature
Dormant
-18°C
Definition of the term dormant
Dormant means inactive. The bacteria are alive, but not actively growing or multiplying
Tell me about the time if bacteria are given ‘ideal conditions’ I.e. food, moisture and warmth
They have enough time they will multiply rapidly
In fact each bacterium can divide into two once every twenty minutes in ideal conditions
If piece of cooked chicken is infected with 100 bacteria and is left to sit in a warm room how many bacteria will be present when it is eaten an hour later
100
| in 1 hour
800
