Topographic maps show elevation via contours and circles and physical maps show elevation via color. Topographic maps show elevation in a specific area while physical maps show elevation in a more general area.

Higher elevation tends to result in less people settling there as it is harder to get to and there isn't much access to fresh water. But those could be reasons to build a fortress there as invaders wouldn't be able to supply a seige.
