- Originally a Bordeaux variety
- Most important variety for red wines
- Full-bodied wines
- Med-to-high levels of tannins (some are suitable for aging)
- Dark fruit character, often with spicy flavors (blackberry, black plum, clove, pepper) and best benefit from oak aging.
- Common to blend Malbec and Cab or Merlot
- Most plantings in Mendoza

- Local speciality for white wines
- Aromatic variety
- Med-bodied dry white wines
- High alcohol
- Medium acidity
- Pronounced fruity/floral aromas (perfume, grapes, peach)
- Widely grown but the best examples come from the Cafayate region in the Northern province of Salta
