Where is Trentodoc made?
In the Trentino region in northern Italy.
What varieties are used?
Traditional Champagne varieties - predominantly Chard, but PN, Pinot Blanc and Meunier are also planted.
Describe the typical characteristics of Trentodoc
Ripe apple fruit, biscuity autolytic notes.
Medium alcohol and medium-medium+ acid.
Very good to outstanding and premium to super premium priced
What is the climate like?
Warm and continental with a high diurnal range necessary to temper the very warm days.
What are the soils like?
Stony and well drained, poorer in nutrients on the steeper slopes.
Where are the grapes planted, at what altitude?
Typically on slopes, off the valley floor, altitude of 400-700m
When is the harvest?
Early-Mid September. Later than in Franciacorta because the altitude leads to a a greater diurnal range and therefore a longer ripening period.
What are the main climatic threats in the region?
Both mildews and botrytis, and spring frost on the lower sites.
What training and trellising system is typically used?
Guyot or Pergola
What are the maximum yields?
105hL/ha - but most producers crop and lower levels for quality
MLF? Yeasts? Reserve wines?
MLF - yes, because acidity is higher here than Franciacorta
Yeasts - cultured, some locally
Reserve - Some, not a huge factor though
What are the lees ageing requirements?
Trentodoc - 15 months (20-30 months common)
Vintage - 24 months
Riserva - 36 months (5-10 years common)
What are the typical sweetness levels?
Brut is most common, but can be Brut Nature to Dolce.
Riserva must be Brut Nature to Brut only
What is the ownership of production like?
Four companies make up 95% of production of sparkling wine
Who is the biggest companu?
Ferrari. It owns 100 hectares, and buys fruit from 500 hectares (the region totals 800 hectares)
