Like other adjectives, ordinal adjectives agree in gender and number with the noun they modify, for example: primero, primera, primeros, primeras.

However, when primero or tercero comes right before a singular noun, you omit the –o, as in el primer plato and el tercer plato, in the example below.

Un almuerzo consiste normalmente de tres platos. El primer plato puede ser una sopa o un cocido. Un Segundo plato típico puede ser carne o pescado acompañado de patatas, verduras o arroz. El tercer plato, el postre, es generalmente una fruta o, en ocasiones especiales, algo dulce como tarta o helado.

A typical lunch normally includes three courses. The first course can be a soup or a stew. A typical second course can be meat or fish served with potatoes, vegetables, or rice. The third course, the dessert, is generally a fruit or, on special occasions, something sweet like cake or ice-cream.
