- Large area 250km from north to south. Wide range of climates.
- North: cool climate, no distinct hot dry summer period.
- Face south l, south east Max. Warmth light.
- High acidity, light body.
- Central area: cote d’Or. Continental climate.
- Freezing winter and dry sunny summer.
- Just ripe, high acid.
- Mainly for still wine production, very few for cremant.
- South region: maconnais and Beaujolais, Mediterranean influence.
- Riper fruit, lower acidity.
- Suffer summer storm.
12 common hazards are hail, spring frost fungal esca. - Max yield 75hL per ha higher than still wine
- Grower need to declare by end of march when pruning decision is made at the end of winter.

- 7 varieties allowed. Chardonnay, pinot Blanc pinot noir, pinot gris and aligote and melon.
- Min. 9 months on lees during 2nd ferment I. Bottle.
- 12 months between tirage and release Inc 9 m on lees.
- Max 20% gamay allowed.
- Crement de Bourgogne eminent: 24 months on lees.
- Cremant de bourgogne grand eminent.
- White only use Pinot noir and chardonnay
- For rose, 20% of gamay is allowed.
- Min 36 months on lees with additional 3 months bottle maturation
- Vintage optional, commonly used.
- But only (0-12g/l)

- Specialist make wine for independent producers and return bottled wine to them for sale.
