What is Botrytis/Noble Rot?
Botrytis is the fungus that grows on extra ripe grapes to cause Noble Rot, causing the grape to lose water -> sugars and acids become concentrated. These grapes are often used to make sweet wines
What average temperature is a cool climate?
16.5 C / 62 F or below
What average temperature is a moderate climate?
between 16.5 C (62 F) and 18.5 C (65 F)
What average temperature is a warm climate?
18.5 C / 65 F to 21 C / 70 F
How does a cold vintage effect grapes?
Grapes have a hard time ripening resulting in higher acidity, less sugar, and less signature aromas
How does a hot vintage effect grapes?
grapes can become almost overripe resulting in uncharacteristic dried fruit aromas. in case of extreme heat the grapes can burn and the vines can die if they do not get enough water
How does lots of rain effect grapes?
heavy rainfall close to the harvest can cause grapes to swell resulting in diluted flavors
