13 Storage and Service of Beer Flashcards
Key consideration when storing beer?
- Time (drink as fresh as possible)
- Temperature (keep beer cool)
- Oxygen (keep beer sealed)
- Light (protect beer form light)
Beer fault after long storage?
Beer can become Stale; hop aroma and bitterness will fade, beer can take on off-aromas such as paper or wet cardboard.
How storage temperature affects beer?
Ideal storing temperature?
cool temperatures: beer changes more slowly, stay fresh longer
room temperature: beer looses freshness and becomes stale quicker
warm temperatures: rapid changes in freshness
Below 8°C (46°F)
For deliberate ageing 11-13°C (52-55°F)
Traditionally served cask beer is best consumed within?
Beer bottles and cans?
Keg beer?
1 - 3 days
immediately
packed and protected with carbon dioxide gas; stay fresh much longer.
What is ‘‘light strike’’ ?
Beer fault by exposing beer to light. Creates smell reminiscent of skunks, cat urine or scorched hair.
(light reacts with hop-derived compounds, produces unpleasant and pungent aroma)
Beer in cans and crown-cap bottles best storage position?
Cork sealed and intended for ageing beers storage?
Upright
Placed on side to keep cork moist.
(upright at least 24h before serving to allow sediment so settle)
Styles of beer suitable for long ageing?
- Imperial Stout
- Barley Wine
- Geuze
(typically beer with high or very high alcohol, high acidity, pronounced aroma intensity and complexity)
Keg shelf life?
Unpasteurised beer: 45-60 days (from time of filling)
Pasteurised beer: 90-12 days (from time of filling)
What is ‘‘cask breather’’ ?
Device which replaces the beer that is drawn from the cask with carbon dioxide instead of air. This increases the cask shelf life to about a week (form 1-3 days if not used)
Cask idea storage and serving temperature is 11-13°C (52-55°F)
Bottles and cans size and shelf life?
around 250-750 mL (8.5-25 US fl. oz.)
typically around 1 year (best consumed within 3-6 months from brewing date)
What is ‘‘growler’’ ?
Refillable container of jug, commonly 950-1890 mL (32-64 US fl. oz.)
once opened beer should be finished quickly (1-3 days shelf life before opening)
Why is it preferable to pour beer into the glass?
(not drink it from packaging)
It allows the head of foam to form and it is easier to detect the aromas of beer.
Appearance of served beer has significant influence on overall appreciation and tasting experience
Common faults associated with storage and service?
- Staling
- Light Strike
- Bacterial infection
Cause of bacterial infection and how it affect beer?
Poorly maintained beer lines
Vinegar and rancid butter notes, often combined.
Serving temperature for beers styles with light to medium aroma, low to medium alcohol
Well chilled
3–7°C (37–45°F)
American lager
Traditional Czech or German pilsner
Weissbier
