WSET1 Flashcards
What are the two parts of a grape?
The skin and the pulp.
What two things do the skins provide?
The colour and the tannins.
The pulp contains the grape juice. What is it mostly made up of?
Water sugar and acid.
In order for alcoholic fermentation to take place, what is required?
Yeast.
At what alcohol percentage does fermentation stop?
15%
When yeast eats sugar, what does it convert it into?
Alcohol and carbon dioxide gas
What does ABV stand for?
Alcohol by volume
Do grapes growing in warmer climates produce more or less sugar?
More. And more alcohol. More sugar equals more alcohol But once the sugar is converted into alcohol, the wine is dry
When does the Grapevine flower?
In the spring
What part of the grape vine turns into a grape?
The flower
As grapes right then, what changes occur?
The grapes well with water, the sugar level in the grapes rise, acid levels in the grapes fall, flavours become riper, and the colour depends.
What two things did grapes need to ripen?
Sunlight and heat
What temperature are most wine regions?
Between 30 and 50°
What type of grape are more common in cool climate regions?
White grapes are more common in cold climate regions. Okanogan, Niagara, Germany. These grapes are higher and acid, lower in sugar and lower and alcohol. Grapes with high acid tend to pair well with food
What groups are more common to warm climate regions?
Red grapes are found in warm climate regions, Australia California Italy France. These grapes are lower and acid and higher in sugar and alcohol.
What are the five steps to making a white wine?
Crushing, pressing, fermentation, maturation, bottling.
What are the six steps to making a red wine?
Crushing, fermentation, draining, pressing, maturation, bottling. Rose wine is made by crushing, fermentation, draining, maturation, and bottling, the pressing stage is skipped.
What are the three types of wine
Still wine, sparkling wine, and fortified wines.
The majority of winds fall between what percentages of ABV?
Between 11.5 and 14%
Some wines are named for the region. Give me five examples
Send sear Sauvignon Blanc, a white wine from burgundy is a Chardonnay, a red wine from burgundy is a Pinot noir, Rioja from Spain is a Tempranillo, a Chianti is a Sangiovese
What type of grapes make up champagne?
Chardonnay and Pinot no war
What are three styles of wine?
Red, white, rose
What two ways is there to make a wine with a medium level of sweetness?
Removing the used before all of the sugar is converted into alcohol is a better way, and another way is to add on fermented grape juice to the wine
In a warm region would you expect to find more or less acid in a Wine?
Less acid. In cooler regions winds typically have more acid
Why is Sauternes different?
A fungus is introduced, Noblerot, the turns grapes into raisins
