Agiorgitiko
Can be jammy if too hot and at low altitude. Higher altitude can be medium tannin, high acidity, deep ruby, red fruit. (grenache from S. Rhone)
Aglianico
Most prestigious black grape of south. Deep color, high acidity, high tannin, black fruits, sees oak.
Airen
Able to deal with extreme heat and drought.
Albarino (Rias Baixas)
Thick skinned, resistant to fungus, high in acidity, stone and citrus fruit. Can be full bodied.
Alvarino (Vinho Verde)
The best are medium alcohol, riper tropical aromas.
Less expensive ones are high in acidity, low in alcohol, citrus fruits. (Vinho verde also has Loureiro and Arinto)
Assyrtiko
Ripe citrus and stone fruit, high acidity, perfume.
Baga
late ripening, thick skinned, deep in color, high tannin. black fruit.
Barbera
Late ripening, medium color, medium tannin, high acidity. red fruits and sometimes black pepper.
Blaufrankisch
Medium Tannin, high acidity, sour cherry and pepper. Highest regarded in Austria
Bonarda
late ripening, deep colors, high acid, high tannin. Basically same as malbec.
Cabernet Franc (Bordeaux)
Vibrant Fruit and Floral notes, but less body and tannin than Cab Sauv
Cabernet Franc (Loire)
Flowers and ripens early. Can do everything.
Cabernet Sauvignon (Bordeaux)
Black fruits, tannic, cedar
Carinena
AKA Mazuelo. high in acidity, tannin and color.
Carmenere
late ripening, full bodied, high tannin, black fruit and herbal.
Chardonnay (Cote D’or)
Barrel fermentation, barrel ageing, MLF, use of lees.
Lean, steely and high acid in Chablis.
Full bodied, riper fruit Macon. Tropical and stone fruits.
Chenin Blanc (Loire)
High acid, but literally everything depending on the circumstances. Can age.
Carignan (South France)
High in tannin, acidity and color, lacks fruit/finesse. Better on old vines.
Clairette, Grenache Blanc, Bourblenc (S. Rhone)
Rich texture, full body, high in alcohol, low in acidity, fruity aromas.
Colombard
White wine for distillation.
Cortese
High acidity and floral. Pale, light bodied. green + citrus fruits
Corvina
New world Pinot Noir of Italy, but duller. Need passito to add complexity.
Dolcetto
Earlier ripening than the other Piemonte varieties. Fine wines, deep purple, medium tannins, medium acidity.
Dornfelder
Deep color, light bodied, fruity. Can be oaked.
Fiano + Greco
Fiano is fuller, medium acidity, stone fruits, melons and mango. Can be oak
Greco is leaner, higher acidity, green fruits and passionfruit. Stainless Steel.
Furmint
High acid white win, apple when young, nuts + honey with age.
Gamay
Granite soils with low nutrients, gobelet. Fragrant with raspberry and cherry fruits. Medium body and tannin.
Garganega
Medium Body and acidity, pears, apples, stone fruits, sometimes white pepper.
Garnacha
High alcohol, full bodied, red fruits.
Gewurztraminer
Full bodied, oily, high acholol, low acidity, extremely aromatic and floral.
Grechetto
Light in body, medium acidity, grapefruit and stone fruit. Orvieto is better if it has more Grechetto instead of Trebbiano.
Grenache (S. Rhone)
Concentrated spiced red fruits, can become baked or jammy. Full bodied.
Grolleau
Cabernet D’anjou is highest rose and is sweet. Rose D’anjou in the middle (made with Grolleau). Rose de Loire is dry.
Gruner Veltliner
If yields are low, it can make full bodied, citrus and stone fruit, white pepper, high acidity white wine. can see oak.
Malbec (Dordogne)
Tannic & Colored, dark berry fruits, oaked.
Malbec (Argentina)
deeply colored, full bodied, high tannin with black fruits.
Malvasia
Medium body, Medium acidity, floral and orange blossom aromas.
Marsanne + Roussanne (Rhone)
Marsanne is rich and has body, Roussanne is acidic and perfumed fruit.
Melon Blanc
high acidity, medium alcohol, light body, green fruit flavors.
Can be lees ages as with Muscadet Sevre et Maine Sur Lie.
Mencia
medium body, medium tannin, fresh fruit, medium acidity, herbaceousness.
Merlot (Bordeaux)
Red Fruits, soft and rich mouthfeel
Monastrell
thick skin, drought tolerant, full body, high tannin, high alcohol, medium acidity, blackberry. Basically cab sauv but drought tolerant.
Montepulciano
high color, high acidity, medium tannin, black plum and cherry.
Mourvedre (S. Rhone)
Cab Sauv but gamey and meaty.
Muller Thurgau
Earlier ripening than Riesling. No high acidity, no flavor intensity.
Muscat Blanc a Petit Grains (Alsace+Hungary)
Intensely aromatic, blossom, medium body and medium acidity. Prone to poor fruit and flower set.
Harslevelu also contributes perfume.
Nebbiolo
Slow ripening at Barolo altitudes, ripens quicker in Barbaresco because of lower altitudes. High tannin, high acid, no color. Sour cherries, herbs, perfume.
Negroamaro
when yields controlled, high quality full bodied, medium tannin, medium acidity, high alcohol, baked red and black fruit.
Nero D’Avola
Medium everything, plums and black cherries.
Petit Manseng
Sweet wines made by passerillage. High acid, apricot and grapefruit, sometimes spicy from oak.
Petit Verdot (Bordeaux)
Very deep color, tannic, spicy notes
Pinot Grigio (Friuli)
Miedum Body, stone and tropical fruit.
Pinot Grigio (Alto Adige Trentino)
Light body, citrus fruit ad green fruits, high acidity.
Pinot Gris (Alsace)
Rich, full-bodied, high in alcohol, more acidic than Gewurz but less aromatic. Fresh fruit, dried fruit, honey.
Pinot Noir (Cote D’or)
high acidity, red fruits, gamey and mushroom with age.
Pinotage
Old vine will be full bodied, flavored, spiced berry fruit. can take on chocolate and coffee aromas.
Riesling (Alsace)
Medium bodied, medium alcohol, high acidity, citrus and stone fruits, steely character.
Riesling (Germany + Austria)
Everything from citrus to stone fruit. High in acidity.
Sangiovese
High acidity, high tannin, late ripener, red fruits, sees oak.
Sauvignon Blanc (Bordeaux)
Made into single varietals, which rest of Bordeaux isn’t. Citrus, green fruits.
Sauvignon Blanc (Loire)
Chalky, well draining soils. High in acidity, green apple and wet stones.
St. Laurent
Red Fruit, high acidity, can see oak. Pinot Noir from Burgundy.
Syrah (N. Rhone)
Colored, tannic, black fruit, black pepper, can be floral. Sometimes is new oaked.

Tannic & Colored, dark berry fruits, oak
Tempranillo
thick skin, medium acidity, red fruits if drank early. can obvi see oak.
Teroldego
Deep color, medium tannin, high acidity, medium body, black fruit.
Torontes
Medium body, medium acidity, intense fruit, floral, stone fruits and melon.
Touriga Nacional
intense color, intense flavor, high tannin, black fruit.
Trebbiano
Pinot Grigio of Alto Adige.
Ugni Blanc
Light bodied white, green apples
Verdejo
highly susceptible to oxidation.If protected can make light bodied, high acid, peachy wine.
Verdicchio
High in acidity, citrus and green fruits, fennel and almonds.
Viognier
Full bodied white, stone fruit and blossom, low acidity, high alcohol. Can get oily if not careful.
Viura
AKA macabeo, unoaked dry, spice aromas.
Welschriesling
High acidity, citrus and green fruits but susceptible to bortrytis.
Xinomavro
Nebbiolo.
Primitivo
When yields are controlled, it is full bodied, medium tannin, medium acidity, high alcohol, riper berry.
Zweigelt
Deep colored, low tannins, fresh black fruit.

Easy drinking, light body, stone fruit.
