Agiorgitiko
Can be jammy if too hot and at low altitude. Higher altitude can be medium tannin, high acidity, deep ruby, red fruit. (grenache from S. Rhone)
Aglianico
Most prestigious black grape of south. Deep color, high acidity, high tannin, black fruits, sees oak.
Airen
Able to deal with extreme heat and drought.
Albarino (Rias Baixas)
Thick skinned, resistant to fungus, high in acidity, stone and citrus fruit. Can be full bodied.
Alvarino (Vinho Verde)
The best are medium alcohol, riper tropical aromas.
Less expensive ones are high in acidity, low in alcohol, citrus fruits. (Vinho verde also has Loureiro and Arinto)
Assyrtiko
Ripe citrus and stone fruit, high acidity, perfume.
Baga
late ripening, thick skinned, deep in color, high tannin. black fruit.
Barbera
Late ripening, medium color, medium tannin, high acidity. red fruits and sometimes black pepper.
Blaufrankisch
Medium Tannin, high acidity, sour cherry and pepper. Highest regarded in Austria
Bonarda
late ripening, deep colors, high acid, high tannin. Basically same as malbec.
Cabernet Franc (Bordeaux)
Vibrant Fruit and Floral notes, but less body and tannin than Cab Sauv
Cabernet Franc (Loire)
Flowers and ripens early. Can do everything.
Cabernet Sauvignon (Bordeaux)
Black fruits, tannic, cedar
Carinena
AKA Mazuelo. high in acidity, tannin and color.
Carmenere
late ripening, full bodied, high tannin, black fruit and herbal.
Chardonnay (Cote D’or)
Barrel fermentation, barrel ageing, MLF, use of lees.
Lean, steely and high acid in Chablis.
Full bodied, riper fruit Macon. Tropical and stone fruits.
Chenin Blanc (Loire)
High acid, but literally everything depending on the circumstances. Can age.
Carignan (South France)
High in tannin, acidity and color, lacks fruit/finesse. Better on old vines.
Clairette, Grenache Blanc, Bourblenc (S. Rhone)
Rich texture, full body, high in alcohol, low in acidity, fruity aromas.
Colombard
White wine for distillation.
Cortese
High acidity and floral. Pale, light bodied. green + citrus fruits
Corvina
New world Pinot Noir of Italy, but duller. Need passito to add complexity.
Dolcetto
Earlier ripening than the other Piemonte varieties. Fine wines, deep purple, medium tannins, medium acidity.
Dornfelder
Deep color, light bodied, fruity. Can be oaked.
Fiano + Greco
Fiano is fuller, medium acidity, stone fruits, melons and mango. Can be oak
Greco is leaner, higher acidity, green fruits and passionfruit. Stainless Steel.
Furmint
High acid white win, apple when young, nuts + honey with age.
Gamay
Granite soils with low nutrients, gobelet. Fragrant with raspberry and cherry fruits. Medium body and tannin.
Garganega
Medium Body and acidity, pears, apples, stone fruits, sometimes white pepper.
Garnacha
High alcohol, full bodied, red fruits.
Gewurztraminer
Full bodied, oily, high acholol, low acidity, extremely aromatic and floral.
Grechetto
Light in body, medium acidity, grapefruit and stone fruit. Orvieto is better if it has more Grechetto instead of Trebbiano.
