Aim is to preserve and express naturally high aromatic potential of the grapes. Strong primary fruit and floral character.

Whole Bunches - v. oxidation
Cool slow fermentation preserves volatile components
Inert vessels against oxidation
No MLF
Usually no oak maturation
Quick bottling after filtration and stabilisation
