A

Aim to keep primary fruit character of the grapes + tradition:‐

  1. Pneumatic press with whole bunches for gentle pressing
  2. Limited skin contact (<3 hours)
  3. Cooler longer fermentation 14-16C
  4. Old large oak casks/stainless steel for fermentation
