Veuve Clicquot Ponsardin Champagne (Bottle Only) - France
-White Blend
- Apple, pear, toast with brioche
- Pair with: spicy food, would be good with the Szechuan lettuce wraps because of the spicy yogurt dressing and korean chili sauce or the spicy chicken
Dom Pérignon 2010 Champagne (Bottle Only) - France
- Citrus, tropical fruits, mint, lemon
- Beautifully integrated but firm acidity
- July and August of 2010 came with rain. The combination of the humidity and heat allowed the perfect condition for the vines to nourish the grapes of pinot noir and chardonnay. It is a blend of 54% chardonnay and 46% Pinot noir.
- Pair with: salty foods. Salt and fat tend to coat the palate while champagne bubbles break theses flavours up. Foods with texture mimic the wines bubbly nature and make the experience more enjoyable. This would pair well with any of our Sushi rolls as the soy glaze will provide the salt and the texture will come from toppings such as yam curls and crispy taro
See Ya Later ‘5 Senses’ Gewürztraminer 2018 - Okanagan falls, BC
- lychee, melons, crisp, off-dry
- Pairs well with oily fish and strong sauces with a mustardy touch. This would pair perfectly with the soy-dijon salmon and would also pair well with the thai green curry with prawns
Gray Monk Pinot Gris 2019 - Lake Country, BC
- Refreshing, Melon, Peach
- Gray monk was the first to plant the Pinot Gris vine in Canada and the founder originally came from austria so the Austrian name for pinot gris translates to “grey monk” which is where the winery got its name.
Mansion House Bay Sauvignon Blanc 2019 - Marlborough, New Zealand
- Tangy citrus, tropical fruit, crispy finish
- Herbaceous notes pairs well with greens such as arugula
Burrowing Owl Pinot Gris 2019 (Bottle Only) - Oliver, BC
- pear, apple, honeysuckle
- Pairs well with seafood, chicken, and nuts so I would recommend the raincoast greens with either chicken or salmon. The spicy pecans will pair well acidity of the wine as well as the lemon thyme vinaigrette will complement.
Jaja Syrah 2019 - Roussillon, France
- soft, black fruit, hint of black pepper
- Pair with Robs Crispy Chicken Sandwich
William Hill Cabernet Sauvignon 2019 - Central Coast, California
- full, fruit forward, dark cherry, cassis, plum , vanilla notes
- full, fruit forward, dark cherry, cassis, plum , vanilla notes
- Pairs well with any steak and great with mushrooms. I would recommend the Four mushroom steak
Red vs white vs rose
- red: red grapes, skin on
- rose: red grapes, some skin
- white: white grapes, no skin
Wine and climate
- warmer climate, riper fruit, more sugar, more alcohol can be made
** fuller bodied
Oak vs. stainless steel barrels
- Oak: impart vanilla butter, spice flavour
- Steel: neutral
** red wines mostly oaked
** full-bodied white wines oaked
