Wine production Flashcards
Malolactic fermentation affects what in a wine?
Acidity (think about lactic-acid)
What style of wine is a White Zinfandel?
Pink/ rosé (despite its name!)
Wines made in cooler climates tend to have what level of acidity?
High (think about how fruit tastes the riper it is)
Red wines are fermented before or after Pressing?
Before (they need the skins, which are separated with Pressing)
What are the 2 ingredients required for creating alcohol?
Sugar and yeast (hence more alcohol created from sweeter, riper grapes).
Sweet wines such as Sauternes are characterised by what level of acidity?
High (hence tricky to make - high sugar AND high acidity is not an easy outcome to achieve).
