What is malting?
Convert starch to fermentable sugars
What is mashing?
When the malted barley is crushed into a coarse flour and mixed with warm water.
Can Bourbon be made anywhere in the USA?
Yes, but the vast majority of production is in the state of Kentucky.
Formula for Bourbon
- Min 51% of corn
- Rye: spicy, rye-head aroma (most commonly used)
- Wheat: dough, bread aromas
What is a mash bill?
A combination of the grains to influence the style of the spirit produced
Where is most Bourbon distilled in?
Column stills, but required by law to be relatively low in strength
Ageing of Bourbon
Must be matured in new charred-oak barrels(vanilla, coconut, sweet spice)
Blending & finishing of Bourbon
- Multi-storey warehouse to allow the blending of different barrels from different floors
- Sugar cannot be added
- Caramel colour is not permitted
Tennessee Whiskey
- 51%corn
- Column still
- matured in new charred-oak barrel
- filtration through maple-wood charcoal
What is Lincoln County Process?
Only for Tennessee Whiskey.
Maple-wood charcoal filtration before it goes into barrel (help to soften & smoothen)
Rye Whiskey
- 51% Rye
- identical production process with bourbon
- spicy, lemon zest, rye-bread aroma, with vanilla & sweet spice
Bourbon Label-Straight
Indicates that the whiskey has been matured for at least 2 years in new oak barrels and that no color or flavor has been added. Can be used for both Bourbon & Tennessee Whiskies
Bourbon Label- Small batch
A higher quality product
Bourbon Label- Age statements
If a bourbon is made using a whiskey that is less than 4 years old, an age statement needs to appear on the label
Tennessee Label- Sour mash
The acidic residue in the base of column still has been added back to the fermenter. Widely used by American distillers but not required by law
