4 Steps of making Whiskey
1-Mashing-grain is mashed, corn, wheat, or rye
2-Fermentation- add water and yeast
3- Distillation-mixture is called a wort, through copper coils
4-Aging- aged in wood barrels
Scotch
From Scotland, made from malt again. Single malt and blended (different grains are added).
Glenn Fidch- single malt
Johnny Walker-blended, aged no less than 5 years, no more than 35 years in oak wood barrels.
Peat moss is added to Scotch to add smokey flavor. Blends tend to be sweeter, except Johnny Walker Black (tastes like single).
Irish
Blended, made in Ireland. Made from barley, aged non less than 4 years, no more than 12 years. Average 8 to 10 years.
2 Types:
Northern-Protestant. This Whiskey is cut with rye. Ex: Bushmills.
Southern-Catholic. This Whiskey is cut with wheat. Ex: Jameson
Canadian
Made with rye, bitter so cut with corn to sweeten. Aged 4 to 10 years in maplewood or almond wood barrels.
Crown Royal-aged 7 years in almond wood barrels.
Black Velvet-aged 8 years in maplewood barrels.
Bourbon
Unique to the U.S. Made in Kentucky. 51% to 75% corn as a base. Sour mash-lactic mash added to corn for more sugar. Goes through charcoal filtering, aged no less than 2 years, no more than 10 years in oak barrels. 80 to 160 proof.
Rye
Whiskey that is heavy, dry, hearty. 51% to 55% rye as a base, cut with wheat. Aged 4 to 7 years in oak or almond wood barrels.
American
Corn as a base, sour mash, won’t be charcoal filtered, aged in barrel. Bottled 80 to 100 proof.
Kessler’s, Imperial, Seagrams 7
Tennessee
Made in TN and nowhere else. Corn as base, lactic sour culture, aged 7 years. Leeching is passing alcohol drop by drop through oak barrels. One week for 1 bottle, one barrel takes one month.
Only TN Whiskeys are Jack Daniels and George Dickell’s.
American Whiskey, TN Whiskey are smooth tasting.
Bourbon burns.
