How is whiskey made
Malting – sprinkling of water on the barley grains to start
germination & then dried roasting in a KILN
➢ Milling – crushing the husk or the outer layer and breaking the inner
of the barley malt to produce GRIST.
➢ Mashing – crushed grains are then mixed with water to form a
porridge like mixture MASH and enzymes are released.
➢ Lautering – separating mash into a sugary clear liquid WORT &
residual grain SPENT GRAIN
➢ Boiling – the wort is then boiled, it stops the enzyme activity.
Cooling – after wort clarification, the wort needs to be cooled to 20°C
before the yeast is added for fermentation.
➢ Fermentation – Yeast is added and it turns the malt sugar into alcohol
known as Distiller’s beer or WASH and carbon dioxide, which is at around
7%-10% ABV.
➢ Distillation – This wash is distilled, the first distillate is called LOW WINES is
produced and has a concentration of about 25–35% ABV. It is then distilled
again to produce HIGH WINE, which contains about 70% alcohol.
➢ Ageing – The High Wines are then diluted with water to reduce the
alcohol concentration to 55-60% and then aged in oak barrels.
➢ Bottling – Once matured, whisky is bottled at a minimum of 40% ABV.
The whisky may be chill-filtered or filtered in another way to prevent it from
becoming cloudy when cold water or ice is added.
Define whiskey
A whisky (also spelled whiskey) a type of distilled alcoholic
beverage made from fermented grain mash (barley, rye,
wheat, corn). Most whiskeys are aged in wooden casks before
bottling and have a minimum 40% alcohol by volume (ABV)

Malt whisky
Whisky that is made from a fermented mash produced primarily from only malted barley.
➢ In Scotland, a “malt whisky” must use a 100% malted barley mash using pot still.
Grain whiskey
Any whisky made, at least in part, from grains other than malted barley, such as
whisky made using barley, maize (corn), wheat or rye.
➢ Grain whisky is typically distilled in a continuous column still in a manner that results in
a higher percentage of alcohol by volume (ABV) but a less flavorful spirit.
Scotch whisky
➢ often simply called Scotch, is a malt whisky or grain whisky (made from malt or grains)
➢ must be entirely made in Scotland.
➢ must be aged in oak casks no bigger than 700 liters
➢ must be aged for minimum three years.
➢ any age statement on a bottle of Scotch whisky, expressed in numerical form, must
reflect the age of the youngest whisky used to produce that product.
➢ must be distilled twice.
