What is Food Chemistry Flashcards
What is food chemistry?
A systemic evaluation and understanding of water, carbs, lipids, proteins, minerals and vitamins as they undergo chemical interactions/reactions during the harvest, processing, storage and distribution of foods
What is a food chemist?
1) Someone who has studied the basic chemistry of food
2) they study how plants have been harvested for food and how animals that are slaughtered for food are processed, prepared and distributed
What is sodium nitrite used to prevent?
Clostridium Botulinum
Why is food chemistry important?
1) In food product development because it helps modify an existing product
2) Required for quality control
3) useful to study reactions that occur in food. Desirable and undesirable
What kind of process is microbial growth?
The growth of microorganisms in food is a chemical process, it occurs when an organism decomposes specific compounds
What are the two applications of food chemistry?
1) apply chemistry principles to facilitate the interactions among food products with desired goals and attributes (DOES NOT REQUIRE GOVERNMENT APPROVAL)
2) explore the chemistry of individual chemical components in a food (most chemical modifications DO REQUIRE GOVERNMENT APPROVAL) Ex. Splenda
