what is a cofactor?
helps the enzyme’s active site bind to the substrate
what is a chelating agent?
group of compounds that mind to metallic ions by changing the shape of the enzyme
why is the potato chopped?
so that they can blend easily without having a lot of heat applied to the enzyme
why must everything be cool?
heat denatures the enzymes, and the cold slows the reaction

so that the ions in regular water dont mess with the results
