Occurs when something gets into food that shouldn’t be there(eg- fly or a hair)

Microscopic organisms some of which may cause disease

What is a microorganism?
A microscopic organism, especially a bacterium, virus or fungus

What 4 conditions do bacteria need to survive and multiply?
Food, Moisture, Warmth
What types of food to bacteria like to grow in?
Food which is high in protein, vitamins and minerals(eg-milk,bread,meat,eggs,poultry)
Explain why bacteria needs moisture to grow
Bacteria needs moisture because it can’t grow in dry foods, however if water is deed to the dry food it then becomes a Redding ground for dry food
Explain how bacteria needs warmth to survive
They like to be kept warm and multiply rapidly in this condition
What temperature is the danger zone for bacteria?
5-63°
When are bacteria dormant?
-18° on the freezer
When are bacteria destroyed?
Between 64-100°
What does dormant mean?
Bacteria is useless when it’s dormant as its temporarily asleep
What is a use by date?
When a food must be eaten by that specific date
What does best-before mean?
This means that food will usually be at their best quality up until this date
