What is a clear soup?
A
Made with stock + added ingredients then strained.

Made from stock, chopped veg and often meat + poultry.

Thickened by it’s own ingredients.made from stock, fresh veg + pulses that is blended and passed.

Made from blonde roux, vegetable stock. It is passed than enriched with a liaison (egg yolk and cream)
