Burrata
A fresh cheese made from a mixture of mozzarella and cream
Tallegio
A semi-soft pungent, smear-ripened Italian cheese
Ricotta Salata
Cheese from the whey of sheeps milk that is salted and aged (90 days minimum)
Whey- the watery part of milk that remains after the formation of curds
Curd- semi solid substance formed when milk curdles or coagulates
Pecorino
A sharp cheese made from sheeps milk
Grana padono
An aged cheese similar to Parmesan but it’s more subtle and not as salty
Riccota
A by product of other cheeses that have been combined and cooked
Mozzarella
A fresh cheese made by heating curds
*Curd- a thick substance that forms when milk becomes sour
Mascarpone
A buttery cheese made by curdling milk cream with citric acid
*Citric Acid- sharp tasting acid present in lemons and other sour fruit
