Describe the climate, topography and soils of the Trentodoc

A

Climate: warm, continental with cooling influences

Mountains

  • protect from cold winds from north and help warm air build on valley floors
  • Altitude and cold air descending in evening mean large diurnal range –> acidity

Soils: stony, well-drained, poor nutrients –> slow ripening –> flavour intensity

Where are vineyards usually located and how does this impact the ripening and cost?

A

Slopes of valley 400-700m

Altitude means diurnals –> slows ripening –> acidity and flavour intensity –> harvest two weeks later than Franciacorta

All work by hand –> considerable cost

A

Traditional method

  • Ferment: usually stainless steel, cultured yeast
  • Malo: yes, acid high
  • Blending: some NV wines make use of reserves
  • Ageing: min 15 mnths on lees, but commonly 20-30mnths
