Trentodoc Overview

A
  • trademarked name for bottle fermented sparkling wine made from the classic Champagne varieties grown in the Trentino region of northern Italy under DOC Trento
  • many wines are 100% Chardonnay but they can also include Pinot Noir, Pinot Blanc and Pinot Meunier
  • higher in acidity than Franciacorta due to cooler climate

Trentino Growing Environment

A
  • warm, continental climate but with marked cooling influences
  • daytime summer temperatures are higher than expected this far north due to the mountains offering protection from cold northern winds as well as heat on the valley floor between the high mountains during the growing season
  • soils are stony and well-drained and become poorer in nutrients on the steeper slopes

Trentino Vineyard Management

A
  • vineyards are typically on slopes above the valley floor in the range of 400-700m
  • elevations mean the fruit takes longer to ripen, building up flavor intensity while retaining acidity
  • harvest determined by acidity and is normally 2 weeks after Franciacorta
  • work has to all be done by hand and adds extra cost
  • vines are trained to guyot or to pergola on the steeper slopes

Trentino Winemaking considerations

A
  • Yields limited to 105 hL/ha but many producers crop at lower levels
  • First fermentation in stainless steel
  • MLF DOES take place because the acidity is much higher here than in Franciacorta
  • cultured yeasts common
  • some companies use small amounts of reserve wines

Types of Trento

A
  1. Trento - minimum aging of 15 mos but much longer in practice
  2. Trento Vintage - minimum of 24 mos on the lees
  3. Trento Riserva - minimum of 36 months on the lees but in practice 5-10 years is frequent. Brut or Brut Nature only.
  4. Trento Rosato
