what are organoleptic qualities?
describes the sensory qualities of a food product (sight, sound, smell, taste and touch)
how does sight influence food?
- appearance makes it appetising
- colour, size, shape, age, garnish and decoration affect feels
- cooking affects what food looks like
- with age, food’s appearance will change
how does sound influence food?
some foods make sounds during preparation, cooking, serving or eating
how does smell influence food?
detect volatile aromas released from foods. Aroma stimulate digestive juices
how does taste influence food?
taste buds detect 4 groups of flavours:
- bitter
- sweet
- sour
- salt
Umami is the fifth sense, savoury taste
how does touch influence food?
surface of the tongue is sensitive to different sensations. As we bite and chew into food, we can feel the texture - mouthfeel
what is an sensory analysis?
tests that identify the sensory characteristics of products, used to gather information on food products
how to set up a tasting panel?
- set up a quiet area where people will not be disturbed (no communication between tasters)
- drink of lemon-flavoured water
- small quantities of food and identically sized plates
- same garnish or decoration
- not too many samples at once
- serve at correct temperature
- clean spoons or forks
- codes for the products
what is a profiling test?
sensory evaluation test to identify specific characteristics of a product
what is a ranking test?
method of putting in order of the intensity of a particular characteristic
