Because Christ is the one who baptizes. The person administering the baptism should do so with a singular intention, (as Christ is singular, not plural) which is why Catholics use “I”. “We” is too vague as to “who” in particular, is baptizing.

Summarize in your own words: why are Mormon baptisms invalid?

Answer 2

They believe baptism does not erase original sin (main cathoilc bleief) and can be repeated. They believe the trinity is mad e of three separate Gods, which might be why they say “we” baptize you (Which also makes the baptizm invalid, as the Trinity is whole, not separate).
