Brined and braised chicken thighs (onion, carrots, celery, garlic, chicken stock) are cooked low and slow until tender and juicy. After cooking this flavorful juice is turned into velouté (rich gravy-like sauce made with chicken stock, sage, worcestershire, thickened with a roux (flour and butter), roasted onions, shallots, carrots, celery root, mushrooms, and cranberries with a cheddar chive biscuit top.
