Lace
1/2oz spirit or grenadine added to the top of a drink
Splash
Customer may request 1/2oz of mix added to any spirit served on the rocks. The term splash by itself refers to water; however the customer could request the following: Splash of soda, Splash of OJ, Splash of Coke, Splash of cranberry, etc
Side/back/Chaser
The requested mixer served separately from the spirit. It is usually ordered in conjunction with a spirit served straight up or neat.
Neat
Any spirit served with no ice (i.e. from bottle to glass)
Straight Up
- Any spirit served as a shot, from bottle to glass, no ice
- Any cocktail built over ice, then strained into a glass without ice
Tall
Any mixed drink built over ice in a large glass
Three Sink Method
- Hot water & detergent
- Rinse
- Sanitizer
Mist
Crushed ice (normally done in a blender), drink poured over the crushed ice (looks like a sno-cone)
Brut
Very dry
Cordial
Something sweet, small glass (no ice)
Box
A method of mixing (not shaking) a drink by pouring the drink back and forth from the glass to another container (shaker can). This method is appropriate for drinks containing half & half, tomato juice, or when using plastic glasses or cups.
Shake Rule
Shake all drinks with lemon/sour mix, milk, cream, or half & half, and any drinks built with a liquor and a juice.
Chilled Shot
Built in a mixing can or glass, a scoop of ice, ordered spirit, chilled and strained into appropriate glass.
On-The-Rocks
Built with ice:
-For all spirit drinks, fill a rock glass with ice and the requested spirit totaling 1.5oz
-For all spirit cocktails, prepare in rock glass with ice
For spirit and mix cocktails, prepare in highball glass with ice
Muddle
The technique of crushing fruit in an old fashion glass by using the heal of a bar spoon or a wooden pestle
