Taste Flashcards
Where are taste receptors located?
In our tastebuds
How many tastebuds do we have? How long do they last?
We have about 8000 - 10’000 tastebuds, and each one contains around 150 taste receptors. They have a lifespan of about 10 days. We have more tastebuds the younger we are, and as we grow older they begin to deplete.
What are the five primary tastes?
- Bitter
- Salty
- Sweet
- Sour
- Umami
What is reception in taste?
Chemical molecules in food/drink combine with saliva. This allows chemicals to stimulate taste buds.
Food, fluids or any substance that is soluble in saliva can stimulate taste buds, which is why you can taste dirt and dust.
What is transduction in taste?
The chemical energy is converted by the receptors on the taste buds into electrochemical nerve impulses.
What is transmission in taste?
The nerve impulses travel to the gustatory cortex in the parietal lobe.
How does our perceptual set influence taste?
Influenced by packaging (colour, shape and familiarity) and branding (perception of quality, reputation, prior experience).
What is culture in taste?
Direct experience with different food, encouragement from parents.
