Q

Difference between suspension and colloid

A

Colloids too large to dissolve, too small to come out. Suspension large particles will come out

Q

Nucleation site

A

Solids are going to form, this is where phase change occurs (when it’s sugars, these solids are called crystals).

Q

What is pectin?

A

It is a carbohydrate, found in the cell walls in a cell, it is the cement that holds cellulose together in the cell walls. A calcium salt needs to be added to form a gel because this is necessary in the formation of ionic bridges.
