Wine storage (long term)
- Cool, constant temp
- Out of direct/strong light
- Sealed with cork
Suggested service temp - Sweet (White, Rose, Sparkling)
Well chilled - 6-8C
Suggested service temp - Sparkling
Well chilled - 6-10C

Light, medium-bodied white & Rose
Chilled - 7-10C
Suggested service temp - Full bodied white
Lightly chilled - 10 - 13C
Suggested service temp - Light- bodied red

Glassware types
Red - Less narrow, wider bowl
White - more narrow, tulip shape
Sparkling - Flutes, narrowest glass, concentrates aromas
Opening Sparkling wine considerations
- Remove foil & take off wire cage
- With cage off, hand always on cork
- Hold bottle at angle
- Twist the bottle, not cork (hand still on), until it pops off
Assessing wine before serving
- No haziness
- No bits
- Smell fresh
Ways to keep open wine fresh
Vacuum system -
Removes air out of bottle i.e. Tall white pump w handle
Blanket system -
Pumps inert gas into bottle.
Heavier than O2 so sinks and sits on top of wine as a protective layer.
Gas does not harm wine.
i.e. standard grey tops (like the boat ones)
