How is vodka distilled?
From anything, but mainly corn - at high proof to remove all flavoring and color
How is rum distilled?
From sugar cane; no malts are needed b/c the natural sugar content is so high. Distilled at high proofs (170-190), then reduced with water for consumption > light dry alcohol, requires little aging.
Dark rums distilled at lower proofs and aged, therefore darker in color.
