A

Veal that we brine over night and set on a tuna pate, the tuna has a buttery consistency that melts in your mouth! Finishes with fried capers, caper berries and pickles Fresno peppers /GF/

A

Buffalo milk mozzarella that we import straight from Italy, served with sundried tomato’s, basil and olive oil.

Grilled Octopus

A

Spanish octopus that we braise for 3 hours before grilling for a nice char and an enhanced smoky flavor. We then mix it in with a white bean ragu and finish the dish with shishito peppers and breadcrumbs.

Cacio e pepe

A

A very popular dish in Italy! Cacio e Pepe translates to “cheese and pepper”, a simple dish that focuses on the high quality of the ingredients and the technique used to make it. A angles hair shape tonnarelli pasta that uses equal parts pecorino and parmigiano cheese mixed with pepper. Topped w more pecorino and pepper and is basically like an adult mac and cheese.

Picchiapo

A

A nice heavier winter time pasta that kind of reminds me of a nice hug. Dish starts with a cavatelli pasta which is a small dumpling like noodles rolled with ricotta and parmigiano cheese and mixed with a braised beef and tomato ragu. Finished by adding parmigiano to marry everything together and topped with pecorino Romano.

Rigatoni con pomodora

A

A delicious meatless red sauce option that uses a rigatoni pasta, a little bigger than a penne pasta. The sauce is a San Marzano tomato base folded into arugula and garlic and finished with a Stracciatella cheese and breadcrumbs.

Bombolotti all’amatriciana

A

A famous roman dish that has been around for 100’s if not 1000’s of years. A Bombolotti noodle is a thicker, fat version of rigatoni and literally translates to “little fat boy”. A san marzano sauce mixed with the star of the dish: guanciale, which is a pork cheek, shallots and garlic, topped with or Pecorino cheese.

Fusilli con ragu

A

We cook down prosciutto in olive oil and chili flakes until all of the fat is rendered out. Cook the mixture in white wine and milk. And lastly add in our San Marzano tomato sauce and top it off with parmigiano reggiano. It’s served over a corkscrew shaped noodle.
