CO2 is a by-product of the fermentation process when making wine

Winemakers add sugar (legal for sparkling wine) to create a sweeter wine. The end result is the style of wine; e.g. Brut: 0-12 g/L, Extra Dry: 17-31 g/L, Dry: 17-32 g/L
