  • Hot and dry inland; humid near coast.
  • Many vineyards located on slopes in the Appenines: altitude provides heat relief.
  • Sea breezes cool the vineyards on flatter Puglian peninsula.

  • Traditional: vines bush-trained low to the ground with leaf cover protecting grapes from sunburn.
  • Now: Cordon training & trellising are the most common methods.
  • Mechanization: possible on Puglia’s flat plain (due to these newer techniques).

  • Deep colour, high acidity, high tannins, flavours of black fruit.
  • Matured in oak
  • Can bottle age: earthy, forest floor notes.
  • Blended into many wines from Campania and other regions.
  • DOCG: Taurasi DOCG (Campania); Aglianico del Vulture DOC (Basilicata)
