A
Natural yeast change sugar to alcohol

Why is there a sour smell?
A
Acetobacter spp. changes the alcohol to vinegar

A
Are atracted and lay there eggs in the infected berries.

How can wounds where sour rot penetrate be induced
A
- initial botrytis infection
- pecking of birds
- berry burst due to odium
- stinging by fruitflies
- bursting/tearing apart of pedicels during swelling of berries in compact bunches

First signs of sour rot
A
yellowish-brown to orange discolouration accompanied by rotting without any slip skin or cracked skin
