What is the 1st SOS?
The 1st SOS is to smile & greet. Even if you’re busy, still smile and ACKNOWLEDGE the guest.
What is the 2nd SOS?
The 2nd SOS is to seat the guests. Check if the guests have a reservation. Point out special menus, wine lists etc. Check guests are comfortable; any cushions needed (for elderly people in particular?)
What is the 3rd SOS?
The 3rd SOS is Farr Brew beers & bread/olives order. Point out if there is anything we don’t have that day. 86 is the number if stuff isn’t in that day.
What is the 4th SOS?
The 4th SOS is the food & wine order. Offer recommendations & side dishes whilst taking the order. Steak & Lamb orders: ask how guest wants it done. Repeat the order back. Remove wine glasses if no wine ordered.
What is the 5th SOS?
The 5th SOS: Mis en place. Must be done immediately after taking the order/ clearing the starter.
What is the 6th SOS?
The 6th SOS is to check-back food & drink. NEVER say “is everything okay?”. Offer a second drink.
What is the 7th SOS?
The 7th SOS is to clear. Use a tray when clearing glasses. Never stack plates at the table. Check if guests enjoyed their meals.
What is the 8th SOS?
The 8th SOS is desserts/ cheese, coffees. Present guest with desserts & coffee menus. Take order and repeat back to guest. Ask if they want their coffee with/ after their desserts.
What is the 9th SOS?
The 9th SOS is digestifs. Offer after guests have finished their desserts & coffees.
What is the 10th SOS?
The 10th SOS is payment. Once requested by the guest, print & check the bill is correct. Present the bill on a tip tray with business card on top. Talk about buying Farr Brew beers & brewery tours.
What is the 11th SOS?
The 11th SOS is to say goodbye & thank you.
