Physical signs of an effective stun

A

Animal collapses immediately and stops breathing.
Front legs and neck extended, hind feet flexed into abdomen.
No corneal reflex, glazed expression in eyes.
Relaxed lower jaw, tongue hanging out.

PSE Pork

A

Pale soft exudative meat
Seen in well muscled pigs due to severe acute stress prior to slaughter - increased lactic acid production - pH of muscle falls rapidly
Fit for human consumption

DFD condition

A

Dark Firm Dry. Usually beef.
Dark colour and dry/stick texture.
Due to chronic stress - glycogen stores used up in muscle.
Usually fit for human consumption, depends on severity.

Cysticercus ovis

A

Intermediate stage of the dog tape worm Taenia Otis.
Oval 3-8mm cysts found in muscles with a good blood supply.
Reject affected area, cold treat rest of carcase.
Reject whole if generalised.

A

Serum sample from every breeding boar slaughtered.

UK currently dz free.
