Size reduction Flashcards
What are the advantages of size reduction?
1 - increases surface:volume
2 - creates uniform particle size for better mixing
Name some methods of size reduction + examples
- Chopping
- Milling (powders or pastes - flour, sugar, starches)
- Emulsification and homogenization (liquids, milk, butter, margarine, ice cream)
What is an example of a shearing force
Cutting
When is Kick’s law used
(course grinding nand change in dimension)
When is Rittinger’s law used
Fine grinding and change in surface area
When is bond’s law used
Between coarse and fine grinding
Function of pulper and finishers
Pulper = macerate whole fruit (crush)
Finisher = smaller refining screens
Size reduction for fiberous foods examples
Slicing, shredders, pulpers, finishers
Size reduction for dry foods examples
Ball mills, disc mills, hammer mills, roller mills, centrifugal mills, granulator
Hammer mill
Particle collision
Granulator
Cuts into granules
Size reduction for liquid foods
High speed shear mixer; pressure homogenizer; colloid mill; ultrasonic homogenizer; hydro-shear homogenizers
What is the function of a homogenizer
Reduce the size of droplets
What is the function of a stablilizer
Increase viscocity of the liquid + prevent colescence
What law do you use for homogenizers?
STOKES LAW - see example on slide 25
