Tartar w/Caviar
Finely chopped (toro, yellowtail,salmon, or boron ebi) mixed with chopped onions and garlic served with wasabi soy sauce. Garnished with White Sturgeon (farm raised) caviar, chives & yamamomo (Japanese mountain peach).
Sashimi Sala with Matsuhisa Dressing
7 pieces of tuna sashimi crusted with pepper is grilled rare, sliced and served with mixed greens with Matsuhisa (onion-soy) dressing.
New Style Sashimi
Thinly sliced (whitefish, salmon, scallop, wagyu beef, oyster, botan ebi, tofu, and tofu/tom) with garlic purée, julienned ginger, sesame seeds, chives, yuzu soy, lightly seared with a mixture of hot sesame and olive oil. (Other variations: All except tuna, toro, abalone, mirugai, tako, or uni)

Thinly sliced whitefish sashimi with a sprinkle of soy salt and dot rocotto (on each piece of sashimi) garnished with cilantro and yuzu & lemon juice. (Default - hirame. Other variations: Octopus, scallops, uni, jumbo clam, migurai, & other types of white fish.)
Black Cod with Miso
72 hour marinated den miso marinated Alaskin Black Cod garnished with hajikami (pickled ginger) and 4 dots of den miso sauce.
Rock Shrimp Tempura with Creamy Spicy Sauce
Rock shrimp tempura tossed in our creamy spice sauce with yuzu juice and shiitake mushroom. Served over mixed field greens tossed in our yuzu juice and garnished with shiitake mushrooms and chives.
Squid pasta with Light Garlic Sauce
Squid cut to resemble pasta sautéed with clarified butter & garlic slices, seasonal vegetables, sprinkled with shichimi and deglazed with sake soy.
Rock Shrim Tempura with Buttrr Shichimi Ponzu
Rock Shrimp tempura tossed in butter ponzu shichimi over mixed greens dressed with yuzu dressing.
