What is shochu?
Shochu is the original spirit of Japan, distilled from a mash and made with water, koji, and yeast.
How does shochu differ from sake?
Sake is fermented while shochu is fermented AND distilled.
Shochu has a high ABV than sake (25-30%)
Sake is made from rice, but shochu can be made from 53 different ingredients. Sweet potato, barley, rice, and brown sugar are the most popular.
What are the two types of shochu?
Honkaku - “Once Distilled”, complex with a lot of flavor
Korui - “Multiple distilled”, much less variation, tastes like soft, light bodied vodka
What does shochu translate to?
Burnt alcohol
Refers to the distillation process of sake which produces shochu.
