“Jerez” is owned by the Spanish, is a particular type of fortified wine. English connection since 15th Century
Where is Jerez?
South West near Cadiz. The temperature is hot, dry chalky soil
What grape varieties is Sherry made from?
Palomino, Pedro Ximenez & Moscatel. You cannot have Sherry from red wine
What are the 4 major styles of Sherry?
-Youngest to oldest-
• Fino - fresh, drunk young
• Amontillado (Manzanilla); slightly sweet “off dry”
• Pedro Ximenez (PX); sweet concentrated and aged for many years in a barrel
What is Flor Yeast?
Forms a cap on top of a Sherry barrel which helps convert the sugar into ethanol
What is the Sherry Solera?
Blending youngness with old wine to get freshness and complexity
