What are the nine steps to setting up the bar?
A
- Fill up your sinks
- Wash and rinse the glassware or equipment on the drain board.
- Wash and wipe dry the bar and bar rail
- Wash and wipe the sink and drain boards
- Fill up ice bins
- Check liquor stock. Restock the speed rack and rack bar, if necessary
- Check your mixes
- Check your garnishes
- Check supplies of cocktail accessories

A bar consists of three tubs. What is contained in each tub?
A
First tub is filled with hot detergent
Second tub is filled with water to rinse
Third tub is filled with water plus sanitizer

Define your mixes:
A
sweet and sour, orange juice, grapefruit juice, Bloody Mary mix, cranberry juice, cream, lime juice, etc.

Define your garnishes:
A
cherries, olives, onions, lemons, limes, etc.

napkins, straws, stir sticks, etc.

What are the fourteen steps to closing the bar?
A
- Empty and dry the spill mat
- Wipe down the bar and bar rail
- Wash and rinse all used glassware and place dry glasses on back bar in proper order
- Wash, rinse, and dry all mixing equipment (roll call each item)
- Clean and dry the blenders
- Wash, wipe down, and and dry drain boards
- Empty and dry sinks. Leave all drainpipes in the sinks
- Fill all bottles completely in speed racks and back bar
- Wipe down all bottles on the front and back bar, and make sure all bottles are in their proper places
- Clean and dry the speed rack
- Make sure all speed pourers are facing label out, wit the speed pourer centered
- Make sure the large ice scoop is on top of the ice machine
- Empty water from the garnish trays, and store garnishes in the refrigerator
- Straighten the bar stool and wait for inspection
