Sit Down Service
Buffet Service
Tray Service
-Family oriented
-Practical for use in everyday dining
-People helped themselves to get food from a common pot on the table.
-Dining is facilitated with the use of Lazy Susan
American or Country Style
-Diners themselves have the duty of serving the different courses.
-Task of serving is assigned either to the father/ mother/ among diners, not just one.
-Food is still served from the table.
Compromise or Family Style
-Food is served from the side rather than from the table (ex. Food is served on individual plates directly from the kitchen.
-May also used for serving food in children’s party
Blueplate or Apartment Style
-Dishes and table appointments are arranged in trays, which are brought to the diner.
-Choice of the menu is limited
-Foods are served attractively
Tray Service
-The food chosen must be adapted for grilling or cooking on charcoal/fire (barbecuing).
-Marinated meats or vegetables can be grilled.
Outdoor Meal Service
This type of service is also used for business dinners at home.
Service of the food is from the side rather from the table since food is served by a waiter.
Formal or Russian Service
Table cloth should be overhang with ___ inches on all sides

Hors d’ oeuvres
This type of buffet serve is more economical to entertain large groups at home. It is held mid afternoon to late evening.
