Table Side Guacamole (and procedure)

Made by server table-side in front of guests
Contains: ripe avocados with tomatoes, red onions, cilantro, salsa, garlic salt, and lemon
When you bring your tray out to the table, the tray should have: a mocajete bowl, all fresh ingredients, fork, spoon, moist towelette, and appetizer plates
PROCEDURE:
Clean hands with towelette
Scoop avocados into the mocajete
Mash them a little then add the garlic salt
Mix avocado and garlic salt
Add remaining ingredients except lemon
(Guac should be chunky)
Squeeze lemon and stir one more time
Serve with dipping chips
