Secondary Meat Inspection Flashcards
Imqa manual
Abnormal odour
Urine smell due to uraemia (nephritis)
Pathological contamination (pus contamination)
Acetone smell due to ketosis
Decomposition due to improper chilling
Gangrene
Metallic smells (copper due to parafilaria )
Judgement if abnormal odour
Decomposition/putrefaction gangerne and pus contamination done based on risk to human health
Parafilaria, ketosis and uraemia condemnation done on basis of aesthetics
Lab tests - organoleptic test - smell and taste
Abscess judgement ?
Most absences can be removed without capsule rupture
Any evidence if metastases, pyaemia septicaemia fever will be condemned
Remove without carcass contamination
Actinobacillus judgement
Actinobacillus ligneressi
Condemn affected organ . Tongue and head
Any sign systemic total condemnation
Anaplasmosis
Gallsickeness
Anaemia jaundice
Diagnosis by blood smear impression smear of spleen
Carcass usually condemned due to citrus and anaemia
Anaemia
Blood watery diluted and carcass pale
Sever cases - total condemnation required due to aesthetics
Arthritis
Increase in incidence- poor hygiene, over pop, broken cement floors
Pathology - enlarged joints, increased joint fluid, thickened joint capsules, involvement of lymph nodes, hyperplasia inflammation congestion
Acute or chronic arthritis may have zoonotic potential . Omg erysipelas .
Judgement of Arthritis
Controversial
Single limb- I’d joint a severely swollen do not cut into joint in order to avoid unnecessary contamination
If draining ln involved with no signs of adjacent ln it can be assumed that arthritis remains localised to single joint without systemic spread
Open adjoining joints to confirm
Amputation of the affected unit us achieved by limb removal at the level of the next affected joint
The draining/ affected ln is removed too .
Hipjoint- joint must be sawed out without causing contamination
If 3 or 4 limbs - septic poly arthritis total condemnation in this case
Maybe if non infectious depending on scenario all four limbs can be amputated
