A

Carignan in the South of France, is grown in the south-west corner of the island, a heat, and drought-resistant variety. It can thrive despite high summer temperatures, low rainfall, and drying winds from the sea - reducing fungal diseases. Low-fertility sandy soils - restrain natural vigor.

common for bush vine training, Superiore must be trained as a bush vine - suitable for the dry climate and restrain the natural vigor. Limited irrigation is permitted - allow vines to grow adequately in the period of fruit. Maxi yields: 77 hL/ha - low flavor concentration. Superiore maxi: 52.5 hL/ha

Carignano winemaking

A

Inexpensive - warm fermentation, fermented and macerated on the skin for 7 -10 days and aged for 3-4 months in large neutral containers (cement, large oak casks). Mid-priced and premium red: macerated on the skins for around 15 days of warm fermentation temperatures for fuller extraction of color, flavor and tannins and aged in French oak barriques for 12-18 months. Superiore and Riserva - 2 years ageing.
